Dr. Steven Gundry’s 2017 book, The Plant Paradox: The Hidden Dangers in “Healthy” Foods, was a New York Times bestseller—and created controversy. The cardiac surgeon not only recommends cutting gluten out of your diet (a step many regard as an unnecessary fad) but also suggests shunning proteins called lectins, which are found in tomatoes, zucchini, brown rice, quinoa, beans and other legumes, and other foods we’re often told to eat more of.
